He shows how to make foldable kayaks.
The basic method should work for the hull.
As you say you would have to generate the hull shape.
Actually some of the Yost designs are so low to the water you might be able to just eliminate the cockpit, make a raised seating area and have them work just like you want, since you would have the outrigger to give you stability.
Or if you could get the geometry for an OC1 it would be relatively easy to convert to skin on frame foldable using the Yost method. http://yostwerks.com/FrameMenu.html

Another example you might convert to Skin on frame is the Raptor16 sailboat. I think it is out of production right now, but look at the article here: http://www.tacking-outrigger.com/raptor_16.html There is a comment that production might be starting back up, there might be more information.

At one time I had some information on a skin on frame catamaran built in Germany - perhaps in the 60's. You might search on this forum for a thread. I believe the thread was started by Jeff Horton of kudzucraft.com The old design would be very much too heavy, but the structure for a long skinny boat might be useful to look at.
