I have just finished stripping the deck of a Great Auk. I used 3 degrees of bevel on the tablesaw for the 3/4' wide strips on the hull. It involved very little bevel planning. I used polyurethane (Gorilla) glue. which fills gaps nicely.
The deck is different, because it has a small radius curve near the shear where I used 5/16" strips and the tablesaw set at 7 degrees and still had to plane a lot of bevels. However. the bulk of the deck is flat and here I used no bevel on the tablesaw and 3/4" wide strips.
The polyurethane glue is nice in that it has a longer (than PVA emulsion) open time, fills gaps nicely, and sands without clogging the paper. The down side is it takes longer to cure, and more expensive. It also turns your fingers black with glue that takes about a week to wear/peal/wash off the black layer. Using a waterless hand cleaner as soon as you are done with a strip, helps a lot with reducing the glue stuck to your fingers.
