Anyway, is it possible to stretch a model like IO to 8 feet

The Io and Ganymede are essentially the same kayak scaled differently. You could scale up the Io design by 14% (multiply everything by 1.14) and the 7' boat would become 8'. The size of the Io was partly defined by the desire to get all the plywood parts on one sheet. Making it bigger would require more than one sheet, but not much more. Note that 14% larger in all dimensions means the displacement would be about 50% greater. You could probably scale just the length, this will distort some of the panels slightly so the fit might be a little off, but probably not insurmountably so.
