Having done a similar pattern, I first stripped the entire deck and then cut out the pattern and filled it in after with oak. I as well would not recommend using b/c strips in the inlays, Use a sharp plane and you will quickly figure out how to fit each one. Most will need very little bevel on the side to fit correctly.
