I have found that the easiest boats to paddle in a straight line are the ones with looser handling. The only time I need help with my Night Heron is in big quartering or following seas. For that a skeg works fine. Keep in mind that either a skeg or a rudder will add drag when in use, and a kick-up rudder can act like a sail on the back of the boat, giving the wind something to push against. They also add a lot of resistance to overcome when learning to roll. It makes it harder.
