If the knots are tiny and tight, they won't make any difference except at the edges where they'll likely pop out. Spruce is nice wood generally, usually fairly expensive for good stuff.

Lots of variation though in strength depending on the exact species and it's quite a bit lighter weight than white pine so I'd want to go somewhat over size for the gunwales, weight should be nearly the same and the strength then will be similar.
