Truthfully a greenland paddle and increase the cadence will eliminate many of the problems you're having, easier on the bod too.

Taking big huge bites of water with a big plastic problem is causing more problems than it fixes.

A skeg won't fix an issue with a skinny boat wanting to roll while paddling anyway, you will get used to the motion and the tippy feeling and it will cease to be an issue given paddling time.
