It makes sense to build on your experience and skill set and try another stitch and glue.
Either a Petrel or a Petrel Play would be great for the purposes you describe.

It would, but I have not enjoyed the plywood process so far, and I have no access to okoume plywood. Since the boat I am building has a design displacement of 75lbs I cheated on the wood a bit. Their are tons of places nearby with cedar boards and other materials though.

SOFs are not going to be a good idea either. One of the places I paddle is overrun with oysters. Due to the nature of the area they occasionally get knocked around by the power boaters and end up where you least expect. I've managed to gouge my SOT plastic job pretty badly. I'd hate to see what that did to a SOF if I rubbed one near the keel.

It really comes down to I want a strip built kayak :)
