You latest version of your KF design would certainly track a lot better than a Guillemot and I would suggest that it would handle most conditions well with no skeg.

However advising someone else about whether they need a skeg or not isn't easy. There are paddlers who struggle to go straight in kayaks that have average tracking and at the other end of the scale there are paddlers who can keep a straight course in white water kayaks which have much looser tracking than any sea kayak. I don't know where you fit on that scale.
