Seriously, I go with seven (7) coats. It takes so darn much scutt work just to do one coat, why not do more while you have just done it all. I use a medium speed hardener, re-coat every 3 to 4 hours and I do not have to worry about adhesion between coats. Then when you do get to the sanding step you have lots of resin in the areas of the edges of the bias cloth and taped re-enforcements. Thus, you are much less likely to cut too far into the cloth as you sand out those pesky uneven areas.
