Different builders do things in different orders for different reasons and I am sure some will add their advice. That said, I do it the way you are proposing. I leave the hull firmly glued to the forms until the deck is done. I do it this way because it makes it easier to line the deck shear strip up nicely with the hull's shear strip if it is still firmly glued in place. However, I do start freeing the deck from the forms after I have finished stripping about a quarter of the deck. The deck comes away rather easily once it is finished. You will use every trick in the book to free the hull from the deck. 1.) long thin blade putty knife. 2.) Heat gun. 3.) Hammer blows and 4.) Slow steady prying pressure.
