I made a wood stem first, following the instructions in Nick's book but it ends up being only about a 7/8 inch wide tapered strip of pine, to which the front ends of the rest of the strips are glued. Before the deck is made I should be able to shape a fairly close block of wood, e.g. basswood which is light and easily shaped, to fill the majority of the front 3-4 inches of the hull and then epoxy it into place. Would you do that after glassing the inside of the hull? If you were to do it before, you would have to glass over this block.

Also regarding the quantity of fiberglass cloth needed for a 17 foot kayak: I am calculating roughly 5 kayak lengths - 2 layers for the outside of the bottom of the hull, 1 layer for the inside of the hull, and one layer for each side of the deck. The book recommends two layers on the bottom for extra abrasion resistance. Finally, when applying two layers of cloth, do you wet out one layer and immediately apply the seoncond layer while the first one is still wet, or do you allow the first layer to dry, scuff sand and then apply cloth and re-wet? Thanks for the help. I've never worked with this stuff before.
