Epoxy penetrates the very small cracks between the strips and bonds them together. If you have wider gaps between strips, you should thicken the epoxy. It does work well.

I tried the method for constructing the hull of my latest kayak.

While it is a very quick way to strip, there are a few warnings:

First as written the strips are only attached dry at the stations. There is nothing holding the strips in place between the stations/forms. After I applied my epoxy I noticed that several strips had slipped vertically, creating steps in the surface. I cut the worst ones free and reglued them before I could sand the surface. Looking back, I would recommend periodic spot gluing between the stations with superglue or even hotglue. This would prevent some of the movement but would add time to what is supposed to be a quick method.

Second thing is the amount of epoxy wasted. I used nearly 16 ounces of mixed epoxy to fill all my joints. I might use 8oz of wood glue. A lot of the epoxy ends up on the surface. I worked the epoxy deeply into the seams but I did have a few spots with bad penetration. The strips came free when I pulled the staples. Before sanding in that area I reglued them causing additional time lost. This leads to the third warning...

Third, the initial sanding is more difficult since epoxy is much harder to sand than bare wood. Whatever savings I had from stripping and post gluing were eaten up by the additional time sanding the epoxy off of the surface. It took three times longer to sand than bare wood and used four times the disks. For reference I used a Festool RO125 with heavy duty P40 Cristal paper on orbital mode.

Last is an appearance issue: the glue lines. The strips are square cut with the epoxy filling the triangular gap between them. There will be glue lines between every strip. On a painted hull this isn't an issue but on a bright finished (ie clear coated) kayak they will be obvious.

For the deck I tried a hybrid method.

I used square cut strips that are edge-glued together. After pulling staples the surface is rough sanded to P40. Any gaps are then filled with thickened epoxy. After curing I did the finish sanding and fairing. The stripping is still very quick and the sanding is quick since it's raw cedar. There is still the glue line issue but immaterial on this painted kayak.
