I don't know what changes that Bjorn made vs. the Ken Taylor boat, but I wouldn't take the Ken Taylor boat on expedition. It just doesn't have enough volume and it pearls pretty bad. It isn't nearly as stable as the standard expedition kayak, the NDK Explorer. Pic of the Ken Taylor boat below. I call it the Iggy.

Personally, I'd take something that was as close to an Explorer or other British expeditions boats as possible. As far as cedar strip, the Siskiwit LV would be my choice. I'd ask the designer to make it slightly higher volume and he'd probably accommodate your request. :)

I'm not sure what I'd pick for S&G, but I'd want something that could handle rough water. Without paddling it, it's hard to know, but probably a Pygmy Murrelet. Or a slight redesign of the Skinny Walrus to add an inch of width and some volume in the deck. The Fram Museum 1888 West Greenland with a different deck would be one of the interesting historic designs to try.
