I haven't built a Yukon, but it should take no more than 1 gallon resin.
Cloth is to your choice but 6oz., plain weave (square weave), E- glass (not special, lower cost) is a typical layup.
When I asked the same question from CLCboats for a design I bought there the answer was "whatever you want and need" 4oz is ok, 6oz might be typical, but extra layers of 6 oz on the bottom might be desirable if you launch off the rocks.
I was not impressed with this answer.
My suggestion as a first build is to go average - 6oz e-glass as stated above.
If you have anything to try on first you will be more confident when starting your "baby".
I typically make about 4 foot of the bow to practice on before I make a boat. That way you get use to stripping (too late for that) and then get to practice on glassing, with out a lot of cost. The stripping does not need to be really meticulous as your boat needed.
Or just get some plywood and coat that. Not quite as good practice - but you can get it done soon!
If you go West system you might want the clear hardener. I don't have suggestions for other epoxies. And buy the pumps - I love the pumps and have never had trouble.
