I don't have a stripper design in mind, but a boat like my Wenonah Argosy would be a good choice for rivers, could easily handle a second seat forward for a smallish passenger.

It'll do smaller lakes well too, at only 14 1/2' it's speed is a bit limiting for big water.

This is assuming the guy has some paddling skills, the Argosy is a bit tender.
