Forget it. My very good friend bought a beautiful 17 ft sea kayak that was top quality build for $200.00 (US)

I suspect I have paid a good portion of that amount for sandpaper alone.
He bought it from a fellow kayak club member at our annual Fest. I don't remember the details of why it was sold. It is a BIG boat from Chesapeake-- careful on the details and some great features added by the builder'

It may have been a once in a lifetime buy, but I have seen other kayaks sit on the sand when the seller attempted to recover the cost of the kit/materials.

Also if either of you are compact(weight not the issue here)--make sure the kayak is not too large to really fit the paddler.
I am 5'2" (I hope I haven't lost too much height) and many of the kayaks I have tried out swallow me. The designs for women seem to be the best fit. If you build a SOF, it is easy to reconfigure the frame before you skin it. Size really is the difference between OK and great. My wife took a lesson in a borrowed boat that was too large for her and it was not a great experience. I doubt I will ever be able to erase the negative part of that experience which has had a direct impact on her enthusiasm to become a paddler.

Good luck. After all the research you'll have to deal with the fact there is no perfect answer unless you have either unlimited time and/or funding. IMO,YMMV. Welcome to the recovery group. It is a terminal illness, but we can sure have some wonderful moments!!!!
