I did a nice fillet on the inside seam of my s&g Night Heron. I then used 2" wide glass tape for the inside. For the outside, I wrapped the hull glass 1" onto the deck and the deck glass 1" onto the hull. The hull has two layers of 6 oz satin weave s-glass and the deck has one. That means I have 18 oz of s-glass on the outside of the seam. Total weight of the 18' kayak with the extra heavy glassing layup came in at 42 pounds. The kayak has seen some rough use in the surf, teaching kids, and leaving my truck at 50 mph. The seam has had no issues with any of that and is holding up fine after many years.
