Strip: kayak kits

I am a first time builder. I am confused on what kit to buy. Weather it is 3/16 or 1/25 inch or cove or bead or just plane strips. I am an experienced wood work with a shop. I am looking at the red fish king which is cove and bead not sure would appreciate any advise
