I know nothing about the Red Fish King.
First time builders might want to use 1/4" strips, because they tend to sand more. There have been a couple of people who sanded thru recently. The basic reason is probably not getting the strips even when you glue them in place to start with, so that would help a lot with any potential problems.
I personally like Rob Macks use of a heat gun for getting strips to lay in place on twisting areas. It is possible to get them to lay perfectly flat and avoid big steps, if you take your time. It is a skill that is learned quickly if you persist.
