I know it seems crazy to use walnut for this, but I have a huge pile of it that I can dig some straight grained out of. Is there any reason not to use it? I know that its a bit heavier than white oak, but I think I can handle that.
Why not. I've dry bent 3/32" - 1/8" thick black walnut for coamings and stems. Like John said, it'll be slightly more brittle and slightly heavier. Darn won't it be pretty... BTW: Black cherry is works nice too. Below is the coaming on the "Nereida" Njord:
