That canoe, pictured, is built much like a traditional Greenland kayak, though serious care I think would be in order since you don't have a relatively rigid deck beams to hold it all straight while you're bending in the ribs. The gunwales will do very little to keep the boat straight. I think I'd add temporary deck beams to keep the shape aligned while bending in the ribs. That would not cause much if any additional weight so the whole assembly could be moved around to make space while building.
