I'm looking more for a shallow-V, non-rockered, 16-17ft canoe around 31" wide with fineness to the pointy side of average and straight sides or minor tumblehome as I think that combination will generate a canoe that makes travelling long distances across lakes (Ontario back country) easier.

I don't know if you are choosing a tandem or solo design?
Anyway, I can highly recommend the Bear Mountain Redbird 17.5' x 33" - a couple of friends and I built 3 of them in my basement shop (I still miss that 18' x 60' shop!) one winter back in the 80s, and we all loved the results. And, the plans are only $85!

Some of the MCA canoes are excellent IMO and plans were cheap ..
