About a year ago I converted to the Paul Sellers method....
This just shows how very different approaches can all work. Putting a convex curve on the 'bevel face' is the way I was taught to sharpen (out cannel) carving gouges, but I don't use it on plane blades.
Jumping from 1200 grit straight to the strop is another thing you don't see very often; apparently it works.
You might find Brian Burns' sharpening video interesting. I studied with him for a week; he's a very thoughtful, innovative, (and nice) guy, and a great craftsman. I learned a lot.

You can replicate his sharpening system with a General guide and some DIY, if you want.
