The primary benefit of carbon fiber in an open layup is aesthetic. It looks cool.
Carbon fiber will be heavier than the same fabric weight of glass, and even glass is stronger than we typically need for our purposes.
It is more efficient use of the expensive cloth to unroll across the boat. With a 1" overlap it is highly doubtful that you will every break the boat due to weakness resulting from the seam. Of course, the seams may not look nice.
