Thanks for everyones help. Not being an experienced paddler the easiest option for footrests seems to be the foam inserts that can be adjusted for different users.

I'd put in 'regular' adjustable footrests if it were my boat; you can always put the foam in later and just slide the footrests forward- they help keep the foam in place.
Apart from adjusting the boat for 'guests', I find myself adjusting the footrests as clothing and footwear changes - the position that's right when wearing fleece, drysuit, and neoprene boots will be way too loose for a rolling class in a pool where I'm wearing thin neoprene and booties.

BTW, I don't mind having the footrest track bolts showing on the outside of the hull - it makes it easier to figure out which end is the bow when a boat is upside-down, and you're setting up for a rescue.

YMMV, and nothing is irreversible, so you can always change your mind later.
