a varnished kayak is very difficult to hold on to if you're swimming next to it without those lines. If you have a perfect roll that may be less of an issue, if not....

Even if you never end up in the water next to your kayak (because you have a bomb-proof roll), you may be involved in rescuing another paddler/swimmer. The swimmer needs a way to hold on to your boat while you are emptying the water from his kayak, etc....
