Dan, what do you mean by "double" booked matched?
The grain is symmetrical side-to-side and front-to-back around the cockpit. The picture below shows some veneer being double book matched (not my work). Same idea just picture the cockpit in the middle. In other words, the fore deck is book-matched left to right. The left side is a mirror of the right. The rear deck then mirrors the front.
The 9" wide sapele board was resawn on the bandsaw through the thickness making four 3/16" slabs and then restacked. They slabs were then ripped to width and fitted to the shape of the deck keeping the strips in order and the grain aligned.
