Craig, I think you have made the same mistake that I made when I first read the bit about 135 degrees and 270 degrees.

I'm fairly sure that the 270 degrees is the vertical rotation needed to lift the rudder blade from pointing straight down to lying parallel to the deck.

Your comment about rudders not needing to turn much to work properly is quite right, but I don't think that is what was meant by the original comment.

I also agree with you about the foil shape. In theory it is more efficient, but I bet you would not notice the differnce on a sea kayak.
