Profile shape, long skinny vs. short wide, will depend much on what the rudder is for. For outright speed, ie: racing, you'd want the highest efficiency rudder with the lowest drag possible so a long skinny thin blade with the minimum size would be better but is less forgiving. For general touring the opposite would be true, you'd prefer a rudder that won't stall easily if you lose attention for a bit so a shorter wider one that might be a bit oversize might be in order. For most people it'll be a balance between the two.
