I agree. I used a clamp on one kayak.
IMO, there's no comparison in the strength of the result (strips glassed on both sides vs glass on one side and the inside backed up with a thin piece of long-grain wood), unless you are using a big and clunky sheer clamp like the CLC boats.
In areas where the deck doesn't meet the hull at a sharp angle, the clamp will need to be tapered so the inside face is rounded. It's quite a bit of work.
Getting the sheer clamp properly coated with epoxy is an extra step - or is the plan to leave unsealed wood on the clamp?
Also, if you are using thickened epoxy to bond the deck to the clamp, there will be squeeze-out on the inside if you use enough epoxy, and that will have to be cleaned up somehow. If you can clean excess epoxy from the inside ends of the boat, you can epoxy a glass tape in there with the same techniques.
BTW, IMO making the job of taping the inside seam easier is a good argument for glassing both sides of the deck so you can cut out the hatch openings before joining the hull and deck. The more access points, the easier the job, though if the hatch openings are small you may still have to work from the cockpit opening.
