When making a Yost SOF "fuselage" style kayak, I use 1/8" ply for a foot board.
It is glued to the keel stringer and the first stringer outboard on each side.
This raises the feet 3/4" over the bottom of the boat.
The style you are building could be done the same way, actually offering much more support to the ply.
