...when one transitions from an extremely stable recreational boat to a real kayak and we've all been through it.

You're used to something that's about as stable as a couch and very tolerant of clumsiness (for lack of a better term). Leaning or edging a boat like that requires large movements and weight shifts. OTOH, a narrower kayak is very responsive and requires much smaller inputs for control. It responds immediately to your actions. It takes time for your body to "calibrate" itself to the new boat. The upside is that once you get used to it, you'll be able to do things in it that would be impossible in your Acadia. The new boat will open many doors for developing your skills and expanding your paddling horizons.

As for the cockpit size, that's plenty large for any paddler. The difference is that you won't just fall out of it as easy. Again, there is a huge upside in that you have much better control of the boat and you won't fall out of it unless you actually want to.

Give it time and you'll be fine.
