If you are just talking about one night trips, kayaks in the 16" by 23"-25" can be stable, efficient up to about 4 mph which is faster than most casual paddlers paddle, and pretty maneuverable. If you are talking 1 week trips and pack like a backpacker 16" will still work but 17" to 18" may be better.
