Most 16' kayaks I am familiar with have about 20% more volume than similar 15 footers but I agree compared to backpacking even a 15 foot allows a luxurious amount of space and weight. There is a reason I can kayak 100 miles and gain weight or backpack a 100 miles and lose weight and it has a lot to do with the food I take. And I agree small dry bags are the key for smaller spaces but larger dry bags are more convenient I think. If you plan on a lot of overnight trips I would consider a 16' for you and a 15' for your wife.
