It's a whole lot faster to build up a nice finish with epoxy than it is with varnish, of course epoxy is also much more expensive, so you have to balance the two.

You can get a perfect finish with varnish, but like Et's said, it'll only look that way in the shop before it's first use unless you plan on hanging it on the wall and not use it.
