Strip: drilling bow-stern holes

Gentlemen,
I am working on my 3rd kayak and, although I haven't been over powered by the "perfectionist" bug yet, it is creeping up on me. I would like to make a major improvement on drilling holes through the bow/stern for the rope carry holes. I searched this site and did not get a single hit.
I have been working - in my mind - on an adjustable jig - for different size kayaks - that has some sort of drill bit guide that can drill the hole straight and half way from each side to get away from the teat-out problem.
I have been using a forstner bit but it makes contact with the boat on one edge of the bit making it extremely difficult to control. So, before I weld up a threaded nightmare of a jig tell me how you guys do it. I am pretty good a copying other's ideas and adapting them for my own situation.
