I imagine the 14' version being a bit more maneuverable when poking around calm waters with the kids while maintaining the stability of a rec kayak.

A 14' version will have significantly less stability than a 17' version. Check the stability figures on Nick's website.

My own quick calculations suggests you will lose roughly 30% of the stability.
