Actually doesn't sound like you're sensitized to epoxy, it sounds like you're irritated by fiberglass dust, which everyone is to some extent. Some of us have gotten used to it somewhat.

Two things, really should have more epoxy on the surface so you're not sanding into the glass and/or need to use more care in getting the glass to conform to the parts you're covering. I wonder, not being able to see what you're covering with the glass, if you are using fiberglass that's sized (coated) for epoxy. That glass that's sized only for polyester won't wet out as nicely as the glass that has the proper sizing and will resist laying flat.
