I know guys have used inflatable camp mattresses for seats, from my limited experience with them they seem heavy. I'd guess a wedge of foam on either side of the keel with a thin foam pad on top of that would work, but you'll have to play with it. Depends much I'd think on how much the fabric flexes between the stringers with water pressure. Not all covers are equal, some flex more than others.
