You might be preparing for a giant thing that doesn't exist.

To do a stripper, I use 1 5-pk of 80 grit discs, 1 5-pk of 220 and a and maybe 3 sheets 400 wet and dry between varnish coats and that's it. (and still don't use it all)

I like Norton discs. (Depot)

I have more sand paper and discs hanging around because I thought like you and bought tons of it everywhere.
