I know what you wrote is true. Some epoxies can not be applied too thick. Something happens that causes the orange peel. That's why you often see certain polyesters and epoxies advertise good for bar top uses. The formula is made so that orange peel will not happen with a thick coat. But not always good for wetting out glass cloth clearly.

Epoxy will blush for a long time and in my experience, if I don't add a coat hours after it sets up, I wet sand it clean and coat it asap. I never get orange peel with that method and I have used all brands at one time or another. I can wet sand a hull in 10 minutes and wipe it clean. So, it's not a big chore for that reassurance. I've been down the orange peel road too. Lastly, the same thing can happen to varnish. I wait a long time before I varnish and do a wet sanding then as well.
