I strip the decks and recess with whatever thickness strip the boat is built with. There is nothing wrong with using a thicker strip for the recess pieces and it would give you a bit more wood to work down and fair as needed. Us contrasting redwood and wrc or pine for simple detail.
To paraphrase , In the end you need faired wood covered both sides in glass.. true, straight, inline, etc
