Depends on the skin used, but most won't require any floorboards for the feet, that'll give you lots of room for your feet. You'll be able to bend you legs somewhat, no reason for any of Tom's boats for the legs to be absolutely straight. Tom's website I think is still down so I can't look up the plans for the Sea Rider but as I remember there's plenty of room, more than you think.

Edit: I did find a link to Tom's site, the boat you're looking at has very similar room as my Sea Ranger and it's got lots of room. Much depends on the coaming size you'll use, on my boat it's a keyhole size and it's quite roomy and has floorboards, though at some point I'll be removing them as they aren't really comfortable.
