Deck rigging is entirely up to you, it's a good idea to have a perimeter line for safety, but otherwise do it how you like.
Epoxy coating wood works fine for items that don't get a lot of wear and edges like hatch edges, very hard to get epoxy/glass go go around sharp corners and will have little strength in the glass if you try, will always trap air. For items that do get a lot of wear and you decide to use wood you can cut the glass for the edge alone, epoxy that on then later cover the flat surfaces. Easier by far to make out of some other material that's more durable used without the epoxy/glass.
