That'll work if you have a big saw that can rip boards a few inches thick at a time (ripping on edge a chunk of 2x12 to get two book matched gunwales) most saws won't like that.
Bigger pieces of wood though are a good idea, I often look at 1x6 or 1x8 boards for the same reason.
