I am going to clearcoat it to keep the wood finish.

That should work, but you will need to be quite precise with your scarf joints, since you won't be able to sand away many errors without going through the face veneer.
Make a good flat work table for your scarf work, and do some practice joints, and you should be OK, I think.
I wouldn't hesitate to use some fine nails ('pins') to hold the scarfs from slipping when weighted/clamped. Epoxy is a good 'lubricant' ! ;-)
