Skin-on-Frame: Polystrene Foam

My son and I are building a Yost skin-on-frame kayak. This is our first kayak we have ever built so we are a "rookie" at all this. Maybe my hillbilly side is showing, but can't I just shape some polystrene foam between the bow and first bulkhead and again between the sterm and last buldhead and skip using float bags? Those area are hard to get to and use so I figure filling most of the area with the foam pieces and glue them to the inside of the stringers were they touch.
Any thoughts would be helpful!!!
