Skin-on-Frame: Right boat for the job?

I'm looking to build a kayak which is to fulfil three quite different jobs and would like some suggestions as to whether I'm being reasonable in expecting this to be possible, and whether the kayak plan I have in mind might be best for it. The jobs are;

1. Family paddling for two down a river.

2. Sea fishing. It should be stable and seaworthy enough for a solo paddler to fish on the ocean. This will be in good weather only and in the Severn channel which is not an open ocean but is an ocean nonetheless (VERY tidal).

3. Sailing. I want to build it with a rudder plus mounting points for a mast and amas which I will build as a secondary project after the kayak is complete. I want it to be sailed from both positions so that my daughter can learn to sail from the front seat with me in the aft seat where it's easier for me to paddle and take control if necessary. This will be in enclosed and protected bays and lakes but also occasionally on the ocean on good days.

I have checked the main providers of plans and have concluded that the Chuckanut 15 from Gentry appears to fit the bill. I prefer the idea of a SoF build and am confident in making slight amendments to the design such as adding a couple of additional cross sections where reinforcement will be needed to mount the amas and mast, which I shall do once the structure has already been built so as not to change the lines. I'm happy that changing the shape of the stern to accommodate a rudder will be very simple. I would change to SaG or strip built if necessary but would be reluctant for the extra time needed to finish the kayak.

I'd look to use the amas of the CLC Kayak sailing plans, possibly with beams of my own design.

Very open to suggestions!
