I'd talk to Dave (Gentry) about what you propose. Dave is a sailor so will understand.

The problem in doing this with one boat is you want a stable platform to fish from and a loose hull to go down rivers so it'll turn well. These two are at the opposite ends of the design curve. So you'll have to pick one that's more important and suffer with that compromise for the other use. Either one will sail. Though with amas the boat won't turn well to start with so that may steer you towards one design vs. another

Btw, unless you have one large cockpit and can sit in the middle, tandem kayaks don't behave well used alone, too much weight on one end and no weight at the other.
